There’s something magical about the first cool evening after a long, hot summer. Suddenly, the windows are open, there’s a little crispness in the air, and all I can think about is making a big pot of soup.

Now, if you’ve been following me for a while, you already know I can’t resist finding new ways to enjoy old Italian favorites. So one afternoon, while pulling apart a rotisserie chicken for dinner, I thought, “Why not turn Chicken Parmesan into soup?”
