Easy Chicken Million Dollar Casserole

It is a rich casserole made with shredded or cubed chicken in a creamy sauce named Million Dollar Chicken Casserole because of its hearty flavors.

Ingredients

  • 2 boneless, shredded or cubed chicken breasts cooked (around 1 1/2 pounds and rotisserie chicken is perfect for this recipe)
  • 1 can  Golden Mushroom soup or Cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1- 8-ounce package of cream cheese
  • 1 teaspoon of granulated garlic powder
  • 1/2 teaspoon dried Italian herbs, salt and pepper to taste
  • Buttery Cracker and Cheese Topping:
  • 1 cup crushed cheese crackers any brand buttery crackers
  • 4 tablespoons of melted butter
  • Pinch of granulated garlic powder and black pepper
  • 1 cup of blended extra-sharp cheddar cheese, either slices or shredded

Instructions

  1. Preheat the oven to 375 degrees.
  2. Grease a 4-quart casserole dish with cooking oil spray or butter.
  3. Whip the cream cheese with an electric beater until smooth.
  4. On low speed, add the soup, herbs, and any other seasonings, salt, and pepper to taste.
  5. Note: For a little heat, add a dash of hot sauce or cayenne pepper
  6. Fold in the chicken.
  7. Pour into the prepared casserole dish.
  8. Top with crackers mixed with butter on top.
  9. Add slices or shredded cheddar cheese.
  10. Cover loosely with parchment paper or cooking oil-sprayed foil for the first 15 minutes, then remove
  11. Bake for 30 to 35 minutes until the cheese is melted and it’s bubbling.
