Ingredients
- 2 cans (12 oz.) wild Alaskan salmon wild Alaskan salmon
- 1-1/2 tsp. Dijon mustard
- 2 scallions chopped
- 1/4 cup fresh cilantro chopped
- 1/4 jalapeño pepper chopped
- Black pepper to taste
- 1 lemon juiced
- 1/4 cup almond meal/flour
- 1 Tbsp. coconut oil or avocado oil, for frying
Instructions

In bowl, mix together all ingredients except oil and use hands to form into 8 patties.

In large frying pan over medium-low heat, heat coconut oil or avocado oil and arrange patties. Fry about 5 minutes on each side until golden brown and slightly crispy.

Serve with or over mixed greens, cabbage or kale.
