This week’s meal plan is all about easy dinners and BIG flavor! We’ve got creamy tortellini soup, a cozy slow cooker favorite, the easiest fried rice, and two delicious dinners to finish off the week. Five family-friendly meals, one shopping list, and no wondering what’s for dinner!
What’s for Dinner?
This week, we’re starting with a creamy, cozy soup, letting the slow cooker handle Tuesday, and keeping Wednesday super simple with dump-and-bake fried rice! Then we’re finishing strong with creamy chicken cacciatore and cheesy pork enchiladas. A little something for everyone!
Creamy sausage tortellini soup is thick and creamy with chunks of cooked pork sausage, carrots, buttery kale and three cheese tortellini pasta all cooked in a smooth tomato sauce. This soup will become an instant favorite!
Slow Cooker Beef Bourguignon has crazy tender melt in your mouth beef and hearty veggies slow cooked to perfection in a rich sauce. This meal is comforting and perfect for the cold months ahead!
Creamy Skillet Chicken Cacciatore has the most amazing creamy red sauce with peppers, mushrooms, and fresh basil. The chicken is tender and juicy and on the dinner table in 30 minutes!
These delicious enchiladas are filled with juicy pork carnitas and smothered in melted cheese. Topped off with homemade red enchilada sauce, this is a dinner that the whole family will go crazy over.

How Many Does This Week’s Meal Plan Feed?
This weekly meal plan feeds about 4–6 people each night. It gives you five dinners for the week, plus one simple shopping list to make grocery shopping easier. If your family has big eaters, you may want to double a side or add some bread, salad, or veggies to round out the meal.
Why Weekly Meal Planning Works
Less 5 p.m. Panic: Dinner is already decided, so you are not staring into the fridge hoping it turns into a plan.
Fewer Decisions: One quick plan now means you do not have to answer what is for dinner every single day.
Smarter Shopping: You grab what you need, skip the random extras, and actually use what you buy.
Skip the Drive-Thru: When dinner is planned, you are way less likely to end up in the fast food line because everyone is hungry right now.
Here is a free printable shopping list for this week’s meal plan. It makes things so easy and saves time. This will help weeknights feel way more manageable! Check out all of my weekly meal plans here.

Storing Leftovers
I only plan dinners Monday through Friday because our weekends are usually a little unpredictable! If you have leftovers, store them in airtight containers in the fridge and enjoy them for lunch the next day. One less meal to worry about!
