Advance Prep & Reheating
If you plan ahead, I recommend marinating the wings ahead of time, up to 1 day in advance.
REHEATING: Quite frankly, these wings do not reheat well. When they’re fresh, the sauce is moist, sticky and glistening on the outside of the wings. As they sit in the fridge, the starch on the wings absorb the sauce, so when you reheat them the wings will be dry. The flavour will also become milder as you’re no longer tasting the sauce straight up, but rather the sauce that has been absorbed into the coating.
My recommendation is to serve them right away and make only as much as you can finish. But of course, any leftovers can be air-fried again (5 mins or so at 385°F) and they’ll still be fine, just not as good as when they’re fresh!
