Ingredients

  • 4 haddock fillets ( or choose another similar fish)
  • 12 large shrimp (or more, depending on how many you can fit on top)
  • 1/4 cup Italian-flavored breadcrumbs mixed with 2 tablespoons grated pecorino romano cheese
  • 2 cloves of finely minced garlic
  • 2 teaspoons of fresh parsley or dried
  • Butter Wine Sauce
  • 1/2 cup dry white wine (or chicken broth)
  • 1 teaspoon fresh chopped dill weed
  • 2 tablespoons freshly chopped Italian parsley
  • 3 tablespoons finely minced garlic
  • 1/2 cup (1 stick) chilled unsalted butter, cut into 8 pieces
  • salt, pepper, cayenne pepper to taste

Instructions

  1. Preheat the oven to 400 degrees.
  2. Line a deep casserole dish with parchment paper for easy removal and cleanup.
  3. Melt the butter in a casserole dish with garlic in the oven.
  4. Remove from oven (be careful, it will be hot).
  5. Place the fish in the buttery parchment-lined casserole dish.
  6. Top each piece of fish with 2 large shrimp.
  7. Mix the breadcrumbs with garlic, parsley, and cheese together.
  8. Sprinkle each piece of fish with shrimp with Italian-flavored breadcrumbs.
  9. Drizzle some of the butter over each piece.
  10. Add the wine (or chicken broth) to the bottom of the pan, not touching the fish.
  11. Add more of the parsley, dill herbs, salt, pepper to taste, and any other seasoning you prefer to the butter and wine.
  12. Bake in the preheated oven for around 12 to 15 minutes or until the fish flakes easily.
