Ingredients
- 6-7 (about 4 lbs.) bone-in, skin-on chicken thighs
- 2 russet potatoes cut into chunks
- 1/2 medium onion chopped
- 1/4 cup lemon juice
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1/2 tsp. oregano
- 1/2 tsp. thyme

Preheat oven to 425 degrees F. In 9×13-inch glass baking pan, combine chicken thighs, potatoes and onions.

In small prep bowl, whisk together lemon juice, olive oil and spices. Pour over chicken and veggies. Let sit on counter to marinate 30 minutes.

Bake 50 minutes to 1 hour until chicken is cooked through and skin is crispy.
