Rocky Road Brownies

If you like rocky road ice cream, you’ll love these rocky road brownies, topped with marshmallows, chocolate chips, and crunchy nuts

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Topping:
  • 3 cups mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350 degrees and grease or line a 9 x 13-inch baking pan with parchment paper. For thicker brownies us a brownie pan 12 x 9.
  2. Cream together using a whisk the melted butter and sugar until evenly blended.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In a clean bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  6. Combine the dry ingredients with the wet ingredients, stirring just until no more white is showing, being very careful not to overmix.
  7. Spread the brownie batter evenly into the prepared baking pan.
  8. Bake for 25 minutes.
  9. Remove the brownies from the oven and immediately sprinkle the mini marshmallows evenly over the top.
  10. Return the pan to the oven and bake for an additional 3 to 5 minutes, or until the marshmallows begin to puff.
  11. Remove from the oven and sprinkle the chocolate chips and chopped nuts over the hot marshmallows.
  12. Place under the broiler for 30 to 60 seconds, watching carefully, until the marshmallows are lightly toasted and golden brown.
  13. Cool completely before cutting into squares.
