Chicken Fried Rice is so easy to make and so flavorful. I used chicken breast meat, but you may use chicken thighs. I also added cabbage for additional crunchiness and sweetness. When you don’t know what to cook, fried rice can always be a good option. It’s packed with protein and vegetables, a quick meal on a busy day. Enjoy!

Ingredients:
2 cups cooked rice (cold)
2 eggs, beaten
6 oz chicken breast or thigh, diced
1/4 onion, diced
1 carrot, diced
1 1/2 cups cabbage, diced
1 tsp minced ginger
2 tsp minced garlic
2 green onions, chopped
light soy sauce
dark soy sauce
salt
white pepper powder
avocado or other neutral oil
sesame oil
Written Recipe for Chicken Fried Rice:
1. Heat a wok or large skillet over high heat and add oil.
2. Lightly scramble the eggs until just set. Remove from the pan and set aside.
3. Add a little more oil to the pan. Stir fry the onions, carrots and cabbage for about 3 minutes, until fragrant and slightly tender. Add a bit of salt.
4. Push the vegetables to the side, and add more oil. Stir fry chicken about a few minutes till it gets some color.
5. Add rice and stir-fry for about 2 to 3 minutes, breaking up any clumps and ensuring the rice is evenly heated.
6. Return the scrambled eggs to the pan, break the eggs, and stir to combine. Add light and dark soy sauce to your taste. Cook for an additional minute.
7. Garnish with chopped green onions and toss well.
8. Optional, drizzle some sesame oil. Serve!
