But even if we’re not smoking for a big gathering, setting up my Traeger pellet grill and then being able to forget it for several hours is always a win. Besides, leftovers are versatile and freeze well. Your future self will thank you.

Tips for Perfect Pellet Grilling
Learning from the mistakes of others (aka me) can be a game-changer.
- The smoking temperature sweet spot is between 225-275°F (105-135℃) for better smoke penetration and juicier meat.
- Trimming the fat cap thickness to about ¼ inch seems to be best. It protects the meat from scorching, especially if you place it with the fat cap toward the heat source.
- A light coating of olive oil, Dijon mustard (my fave), or mayo goes a long way in binding the rub to the roast.
- Occasionally spritzing with water or apple juice will help keep it moist.
- Smoke until it hits the stall at around 150-160℉ (65-70℃), then decide whether to wrap or not. Not wrapping creates an intensely flavorful but harder bark. Butcher paper makes the cooking time longer, and you may lose precious juices. Wrapping it in aluminum foil keeps it moist, holds in the heat, and saves those amazing juices.
- Absolutely let the roast rest after pulling it from the smoker. The minimum is 30 minutes, but if you have a clean and empty cooler, 1-2 hours is ideal.
How to Pellet Grill a Pork Butt Roast

- Trim and season the roast, marinate, and smoke until it reaches the right temperature. Basting with hot sauce is optional but recommended.

- Wrap and continue smoking in the pellet grill until fall-off-the-bone tender.

- Brine the pork roast for 12-24 hours for even juicier meat. Or try an injector marinade.
- Common wood pellet options include hickory, apple, cherrywood, maple, and pecan. Mesquite is quite strong, so use it sparingly with other wood chip flavors.

Make-Ahead and Leftover Makeovers
Smoke the roast a day or two before your cookout, then reheat it at serving time. It should last just fine for 3-4 days in the fridge or 4-5 months in the freezer.
You could also prep the roast, season it, and freeze it whole for up to 3 months. Thaw it overnight in the fridge, and smoke as usual with no need to let it come to room temperature.
Chop leftovers and add them to chili for a beautiful smoky bite. Slice some of it before shredding and save it for Cuban sandwiches. Ramp up your egg fried rice, mac and cheese, or a Cobb salad with a healthy serving of shredded pork.

Classic sides include potato salad, coleslaw, baked beans, and other classic BBQ sides you love. Don’t forget plenty of homemade honey BBQ sauce. For a kid-friendly picnic, have some toasted buns ready for pulled pork sandwiches, corn tortillas for tacos, or mini buns for sliders.
