Ingredients
Simple syrup
- 1/2 cup water
- 1/2 cup cane sugar
- 3/4 cup fresh or frozen raspberries
- 1 tsp. vanilla extract
Drink
- 2 fluid oz. lemon juice freshly squeezed
- Club soda for topping off
- Fresh raspberries for garnish
Instructions

Place small saucepan over medium heat and add water, sugar and raspberries. Bring to boil, then reduce heat and simmer for 10 to 15 minutes, stirring often, until raspberries are broken down.

Remove from heat and strain through fine mesh sieve into small bowl. Press as much juice as possible out of berries before discarding.

Whisk in vanilla extract and let cool.

To make one drink, fill cocktail glass with ice and add one ounce raspberry simple syrup and one-half ounce lemon juice. Stir gently, then top off with club soda and garnish with fresh raspberries.
