Mexican Lasagna
This American Mexican casserole for lasagna is the perfect meal using some of the traditional ingredients we love, like refried beans, ground beef, and loads of melted cheese is a great way to celebrate any day of the week, even Taco Tuesday.

Ingredients
- 1 8-ounce package of shredded Jack cheese combined with
- 1 8-ounce package of extra-sharp cheddar, shredded
- 1 package of 10 flour tortillas or use low-carb tortilla shells
- 1 16-ounce can of refried beans
- 1 pound of ground beef (or ground turkey or ground chicken)
- 1 tablespoon chili powder,
- 1 teaspoon ground cumin
- 1 teaspoon granulated garlic powder
- 1 tablespoon chopped parsley ( or cilantro)
- salt and pepper to taste
- 1 large 28-ounce can of diced whole tomatoes or fire-roasted tomatoes
- 1 – 4-ounce can of diced green chilies
- 1 small 4 – ounce can of tomato sauce
- 2 teaspoons of minced garlic
- pinch of chopped fresh parsley
- Cayenne pepper for heat if desired
- Optional: a package of mild to hot taco seasoning can be used in place of seasonings
- olive oil, vegetable or canola oil
Instructions
- Preheat the oven to 350 degrees and grease a deep 10 x 10 casserole dish with cooking oil.
- In a large frying pan, add a few tablespoons of oil, add minced garlic and saute for 2 minutes, then add ground meat, and cook till pink is gone.
- Drain the excess fat out.
- Add all seasonings, tomatoes, and all other ingredients (except the cheeses and refried beans), and simmer on low heat for about 10 to 15 minutes.
- Remove from the stovetop and stir in the refried beans.
- Assemble with the tortilla on the bottom first, then add a layer of meat and both cheeses. Repeat, ending with a tortilla, sauce on top, and cheese.
- Bake at 350 until cheese is brown and bubbly and edges look crisp, around 20 minutes.
- Let it sit for a few minutes before cutting and serving.
- Garnish: with sour cream, avocado, jalapeno, diced tomatoes, chopped onions, and black olives.
