Grilled cheeses –
Sourdough bread
rotisserie chicken or roasted chicken (no skin)
bbq sauce of choice
melty cheese: mozzarella, raw cheddar, provolone, etc.
red onion slices
pickled or fermented jalapeno slices
cilantro (optional)
butter for grilling in the cast iron skillet
Green apple slaw (I left the fennel out) –
Stir fry –
1 lb chicken breast cut into 1″ chunks, then toss with 2 tbsp flour, 1 tbsp cornstarch
3 cloves garlic, minced
1/4 cup honey
1/4 cup soy sauce
1/4 cup fresh orange juice & the zest from 1/2 an orange
1 tsp toasted sesame oil (optional)
1 lb broccoli florets (fresh or frozen)
green onions for topping!
Cajun Veggie Pasta (*it’s soooo good) –
1/2 lb short cut pasta, cooked and 1 cup of pasta water reserved (or use chicken bone broth!)
1 lb grass-fed kielbasa, sliced thin (get it at Costco)
1/2 red onion, thinly sliced
8 oz mushrooms, sliced
1 zucchini, quarted then sliced
3 cloves garlic, crushed but not chopped (to avoid burning)
1/2 tsp or more to taste cajun seasoning – I use this one:
salt and pepper to taste
Place all the veggies in a cast iron skillet or baking dish and drizzle with 2 tbsp of oil. Roast at 450 F for 15-20 minutes or until everything is caramelized and tender.
After cooking, add 1 tbsp butter to the skillet along with chicken bone broth or pasta water, grated parmesan cheese, and the cooked pasta. Toss to combine, adding more liquid as needed. Enjoy!
