Must Try

  • To begin making the Kumbakonam filter Coffee recipe, get all the ingredients ready.

  • Prepare the Filter: Assemble the traditional South Indian coffee filter. It has two compartments – the upper one with perforations and the lower one to collect the decoction. Add the freshly ground coffee powder to the upper compartment and spread it evenly.

  • Brewing the Decoction: Gently pour hot water (just off the boil) over the coffee powder in the upper compartment. Use about 1 cup of water. Close the lid and let the water seep through the coffee grounds slowly. This process will take about 10-15 minutes. Once the decoction has filtered through, it should be dark and strong.

  • Prepare the Milk: While the decoction is brewing, heat the milk in a saucepan. Bring it to a boil, then simmer for a few minutes to get a creamy texture. Be careful not to scorch the milk.Froth the milk by pouring it back and forth between two vessels or using a milk frother to achieve a light, frothy consistency.

  • Mixing the Coffee: In a stainless steel tumbler or a regular cup, add 2-3 tablespoons of the brewed coffee decoction (adjust based on your strength preference).Add sugar to taste.Pour the hot, frothy milk into the tumbler, holding it high to create a frothy layer on top.

  • Serve: Mix the coffee well by pouring it back and forth between the tumbler and the davara (or use another cup) to combine the decoction and milk thoroughly and to further aerate the coffee, creating a thick froth.

  • Serve immediately while hot, enjoying the rich, aromatic flavors of Kumbakonam-style filter coffee.Tips:Use freshly ground coffee beans for the best flavor.

  • Adjust the ratio of coffee to chicory to suit your taste. Ensure the water used for brewing the decoction is hot but not boiling to prevent bitterness.
