Ingredients
- 1 cup plant-based butter softened
- 1 1/4 cups cane sugar
- 1/2 tsp. Himalayan salt
- 1 Tbsp. egg replacer + 2 Tbsp. water
- 1 tsp. vanilla extract
- 1 medium lime zested
- 1 Tbsp. lime juice
- 2-3/4 cups all-purpose flour
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 cup white chocolate chips
- 1/3 cup macadamia nuts chopped
Instructions

Preheat oven to 375 degrees F and line baking sheet with parchment paper.

In mixing bowl or stand mixer, mix together butter, sugar and salt. Add in prepared egg replacement, vanilla and stir until combined. Mix in lime zest and juice.

In separate bowl, sift together flour, baking powder and baking soda. Slowly pour the dry into the wet ingredients, stirring until dough forms. Roll dough into roughly 2-in. rounds onto parchment-lined baking sheet.

Bake for 8 minutes or until edges are lightly golden brown. Remove from oven and allow to cool slightly before removing to wire rack to cool completely.

Garnish with extra lime zest before serving.
