Ingredients

  • 2 Tbsp. avocado oil
  • 1/4 cup onion chopped
  • 1/2 cup bell pepper diced
  • 1/2 cup carrots shredded
  • 1-2 garlic cloves minced
  • 1/2 tsp. paprika
  • 1-1/2 tsp. chili powder
  • 1 tsp. ground cumin
  • 2 cans 30 oz. vegan chili
  • 8 oz. pumpkin puree
  • 2 cans 10 oz. tomato paste
  • 1/2 cup vegetable broth

Instructions

  • In large pot over medium-high heat, add oil.
  • Add garlic, onion, pepper, carrots and spices. Sauté until softened.
  • Add chili and cook for 5 minutes.
  • Stir in broth, tomatoes, pumpkin puree and bring to boil.
  • Cover and reduce heat to simmer and cook for 15-20 minutes.
  • Serve with garnishes of choice.
