This recipe uses drumstick which is cooked and flesh removed. The flesh is sauted with onion and garlic and ground to a puree to make this soup. The soup doesn’t has milk or cream added. The ground drumstick flesh along with onions and garlic naturally provides the creamy texture.

Drumstick Soup Ingredients

Drumstick – use young drumsticks which has tender seeds which cooks faster and makes the flesh remove easily from drumsticks. Drumsticks can be cooked in an open pot for 10 minutes. You can cook in pressure cooker for 2 whistle.

Onion or Shallots – onions is sauted with ghee to add flavour. Instead of onions you can use shallots.

Garlic – use whole garlic cloves which is cooked in ghee for flavour. You can add more or less depending on how garlicky you want to the soup to be.

Ghee – pure desi ghee is added in making of soup to make it even more tasty.

Spice Powders – cumin powder, pepper powder are the main flavouring.

Hack for Easy Drumstick Soup

In this recipe I have shared recipe which involves cooking drumsticks separately and removing flesh from it. The flesh is then pureed to make the base of the soup. But if you don’t have that much time on hand, you can follow this easy hack for making drumstick soup.

Cut drumstick into small pieces, boil them and take the whole drumstick in a blender with skin and all. Puree till smooth. Now you can strain the stock and make the soup. This method extracts maximum drumstick flavour, but the only drawback is the soup will be thin. But flavours will be still there.

How to Make Drumstick Soup (Stepwise Pictures)

Cooking Drumsticks

1)Take drumstick and cut in half which makes the drumstick cooks faster. You can cook drumstick whole as well.

2)Take drumstick in a cooking pot or pressure cooker.

3)Cover with water. Add water to immerse the drumstick. Also this will turn into drumstick stock.

4)Bring the drumstick to a full boil. Cook for 10 minutes till drumstick is completely cooked.

5)Now the drumsticks are completely cooked. You can taste the drumstick to check whether it is cooked completely.

Removing Flesh from Drumstick

6)Strain the cooked drumstick through a sieve. Allow the drumstick to cool completely which makes the peeling process easier.

7)Once the drumstick is cooled enough to handle. Take a drumstick in your hands and use the spoon to scoop out the flesh. It will be easy to scoop the cooked drumstick flesh using your spoon.

8)This is the drumstick outer skin, you can discard this.

9)Take the drumstick flesh in a separate bowl and reserve the cooking stock in separate bowl.

Saute Onions & Garlic

10)Heat ghee in a pot. Add in onions or shallots. Saute the onions for 1 minute till golden.

11)Add in peeled garlic cloves and mix well. Cook this for few minutes.

13)Add in the drumstick flesh and mix once.

Grinding Drumstick Soup

14)Take the cooked drumstick in a blender. We are going to grind into a smooth puree.

15)You can add some of the drumstick stock into the cooked drumstick when grinding.

Making Drumstick Soup

16)Take the stick in a sauce pot. Bring it to a full boil.

17)Add in the drumstick puree into the stock. This puree adds the creamy texture naturally to the soup.

18)Mix well and cook for few minutes.

19)Add in roasted cumin powder and mix well. This adds a smoky aroma to the soup.

22)Bring the soup to a full boil. As the soup boils, there will be a scum forming on top.
