Carrot stuffed paratha is a yummy and delicious paratha made with grated carrots, whole wheat flour and spices. This is one such easy paratha recipe that kids will love it for its taste and orange colour. The recipes use everyday simple ingredients and can be made in less than 30 minutes.

This is one paratha which I loved a lot. It had a beautiful orange colour to it, plus it tasted so yummy. You can make this, cut into little triangles and give it to your kids, they will love it for sure.

About Carrot Paratha

Carrot paratha, also known as Gajar Ka paratha, is a popular North Indian stuffed flatbread made with carrots, spices and whole wheat flour. The ingredients are mixed and form into a soft dough. The carrot filling is stuffed and rolled and is cooked on hot tawa or griddle with oil, ghee or butter. The outer layer will be cooked golden crispy, while the stuffing stays soft inside. Makes it perfect for breakfast, lunch or dinner. The stuffing can be made ahead of time and it comes handy during busy days. 

Carrot is one of the favorite vegetables for me and kids because of its sweetness and color. We generally use it to make carrot poriyal, carrot kheer, carrot halwa and sambar. The idea of making this carrot paratha is inspired from the famous aloo paratha recipe. It is a versatile one that you can make any filling of your choice like paneer, potato, radish or even with egg and chicken. The parathas are a super healthy and filling recipe perfect for breakfast, lunch or dinner. 

This carrot paratha filling is prepared by sauteing the spices like cumin, chilli powder, jeera powder, grated carrots in oil. Followed by making a dough using wheat flour, salt and water. Knead it to a soft dough like chapathi. The carrot filling is stuffed into a small dough, rolled into a thin disc. The rolled paratha is cooked on hot tawa using oil, butter or ghee. It should be cooked till golden crispy on the outside and it stays super soft on the inside. This hot and yummy parathas can be served with curd, pickle, and raita.

Flavourful filling : The filling is made using cumin, carrot, chilli and coriander leaves. It has a balanced flavour of mild sweet and spice, without overpowering. The carrots are sauteed until dry because they won’t stick while rolling the dough and are easy to make. 

WHY I LOVE THIS RECIPE – Carrot paratha is a one such wholesome and filling recipe, the stuffing spices are so flavourful and the texture inside is moist and soft. It stays fresh and soft for a long time and a perfect lunch box or a quick evening snack recipe. These stuffed parathas are a great idea to sneak in vegetables into your kids meal. 

Customizable : The paratha recipe is so versatile that you customize the flour filling of your choice. For instance, you can make the dough using millet flour and the filling can be made with other vegetables like paneer, potato, peas and beetroot. And also instead of water, add spinach puree, carrot puree, or beetroot puree while mixing the dough. It will be so rich in color, flavour and nutrition. 

Ingredients

Flour : I have used whole wheat flour for making paratha dough. But you can make the dough using other flours like all purpose flour and millet flour. 

Oil : I have used regular cooking oil for cooking the paratha. But you can also use a mix of ghee or butter and oil.

Cumin seeds : Cumin seeds add a warm, earthy flavour to the filling. To add more aroma, you can also add ajwain seeds. 

Spices : I have used chilli powder and jeera powder for the spice. To make it spicier, you can also finely chopped green chilli or chilli flakes. 

Salt : Salt is used to enhance the flavour of the filling and balance the overall taste. 

Carrot : Grated carrots are the star ingredient of the paratha. Cook the carrots until all the moisture content is removed. 

Coriander leaves : Add finely chopped coriander leaves for fresh herb flavour. 

Hacks

Soft dough : Mix the wheat flour with warm water and salt. Make into a soft and smooth dough. Apply some oil over the dough, cover and let it rest for at least 30 minutes before rolling. 

Make ahead : The grated carrots filling can be made in advance and stored in the refrigerator. It will be useful during busy days. 

Cool down : Always cool down the carrot or any other filling completely before rolling. Otherwise it will be sticky, messy and hard to roll. 

Fall off stuffing : For beginners or if you’re making stuffed paratha for the first time, this usually happens. So don’t panic. Seal the edges of the dough completely after placing the filling. Press it gently to flatten and then start rolling into a slight thin disc.

First lets make the dough..Take wheat flour in a bowl
add in some salt
drizzle in some oil
use your hands to rub it well
this makes sure that the oil is mixed in with the flour nicely
pour in water and start kneading
add more water as needed
you should be keep on kneading the dough till you get a soft smooth dough like this
cover the dough and let it rest for 30 mins..
Take your ingredients for filling
cut the top and bottom of a carrot
grate them
Heat oil in a pan
Add in cumin, salt, chilli and jeera powder
mix well
add in carrot
toss for 2 mins
Add in coriander leaves
mix well
Remove it to a bowl and let it cool down
Now take your dough
Divide it into equal balls
Roll a ball into rounds
spoon some filling in it
cover with another rolled one

Expert Tips

  • Add other spices like garam masala powder, chaat masala, ajwain seeds for added flavour and aroma. 
  • Cooked and mashed potato can be added to the filling for a soft and filling paratha. 
  • Add grated cheese along with carrot for a yummy and cheesy filling. Kids will love it for sure. 

Storage

Store the hot carrot parathas in a casserole, hot box or cover them with aluminum foil. It stays fresh and soft at room temperature for a day. For longer storage, transfer the paratha to an airtight container and keep it inside the refrigerator for a week. It is also a perfect travel friendly recipe. 

Reheat the stored paratha on hot tawa or in the microwave oven with little oil or butter. 

Serving

Serve hot these yummy, filling and healthy carrot paratha with butter, curd, pickle, or with any curry like plain dal, paneer butter masala, vegetable kurma. Or it can be enjoyed on its own without any accompaniment. 

FAQ 

Q.Can I make it with other flours ? 

Yes this recipe works with other flour like jowar, bajra, finger millet, all purpose flour. The elasticity of each flour varies. So, mix and cook accordingly. 

Q . Is it healthy ?

Absolutely ! It is a healthy recipe made with carrots which is high in fiber. If you use less or no oil for cooking paratha, it makes a great healthy meal option. 

Q.What other ingredients can be added ? 

Along with carrot, you can add grated beetroot, mashed potato, chopped onion, grated paneer, tofu for added nutrition. For flavour, along with spices try adding garam masala powder, ajwain seeds and chaat masala powder. 

Q. Is it difficult to make ? 

No, not at all. The process is so simple and similar to aloo paratha. The key to a stuffed paratha is the dough should be kneaded soft and while cooking the carrots the excess moisture content should be removed. 

Variations

Carrot and cheese paratha : Add some grated cheese to the carrot filling. Along with it add oregano seasoning, chilli flakes for flavour. Stuff these inside the dough and roll. When cooked, the cheese melts inside and it tastes really delicious and cheesy. Kids will love this version for sure. Serve it hot and it can be enjoyed on its own. 

Aloo paratha : Aloo paratha is a popular flatbread recipe in North India. It is made with mashed potato, wheat flour, ajwain, cumin and salt. This paratha will be so delicious and satisfying. Serve it with pickle and curd. 

Carrot paneer paratha : Add some grated paneer or tofu along with grated carrots for added flavour. The paneer or tofu are rich in protein and make your meal more filling and nutritious.

Instructions

  • Start by making dough, take flour, salt, oil in a bowl. rub well so oil is mixed in with the flour.

  • Add in water slowly and knead to a soft smooth dough. Cover the dough with a bowl and set aside for 30 mins.

  • Heat oil in a pan, add in cumin an all spices. Add in salt and mix well. Add in carrot and give a quick 2 mins toss.

  • Now add in coriander leaves and mix well. Set this mix in a bowl and let it cool down.

  • Take the dough and divide into equal balls. Take two balls and roll it out lightly.

  • Place one rolled paratha near you, spread some filling over it, cover with other paratha, seal the edges, use a rolling pin to roll the paratha even more.

  • Heat a tawa, put the paratha on hot tawa, cook for few sec, flip over, spread some oil over it, spread again, spread some more oil over it and cook on both sides till golden.

  • Remove and serve hot.
