Step By Step Cake Mix Fruit Cake Cookies
- prepare baking sheets with oil spray or parchment paper
- preheat the oven to 350 degrees
- mix all ingredients and fold in any mix-ins
- bake for 12 to 14 minutes
- cool and frost

Cake Mix Fruit Cake Cookies
A fruit and nutty cookie that starts with a spice cake mix for a festive cookie for the Christmas holiday cookie tray!

Ingredients
- 1 package of Spice Cake Mix (15.25-ounce box) any brand you prefer
- 1 -3/4 cups of flour
- 4 eggs
- 1 teaspoon vanilla
- 1 stick of butter melted (1/2 cup)
- 1/2 cups of assorted chopped nuts (walnuts, hazelnuts, macadamia nuts, pecans, pistachios) of your choice
- 1/2 cup chopped glazed or maraschino cherries
- 1/4 cup green glazed cherries
- Note: see additional mix-in options below under notes
- Optional: add extra cinnamon, nutmeg, ginger, and cloves if desired around 1/4 teaspoon of each
- (for nut allergies use pumpkin seeds or sunflower seeds)
Instructions
- Preheat the oven to 350 degrees and prepare a baking sheet with parchment paper.
- Place the cake mix in a bowl.
- Add the eggs, melted butter, flour, and vanilla, and mix them all together just until blended.
- Note: dough can be divided in half with different mix-ins if anyone has nut allergies and leave them out of one half.
- Add the mix-ins and if adding any more spices to this step.
- Roll into balls with flour hands.
- Place on a lined cookie sheet with parchment paper or a Silpat mat.
- Bake at 350 degrees for around 10 to 12 minutes or until the middle is dry and the bottoms begin to brown on the edges.
- Remove from the baking sheet to a wire rack and cool completely.
- Frost with homemade or canned frosting, homemade frosting, or dust with powdered sugar.
- Note: you can also drizzle them with melted white chocolate, sprinkle with with cinnamon sugar, or leave them plain.
- Store in a tight container.
- These will freeze unfrosted for up to 3 months.
- Homemade Icing:
- 2 cups of powdered sugar
- 2 tablespoon butter at room temperature
- water to make a thin free-flowing icing
- pinch of cinnamon
- Mix together using 1 tablespoon of water at a time until the icing is thin enough to dip the top of the cookies into to. Dry before storing on wax paper.
