Berry Baked Oatmeal With Almond Butter Drizzle

  1. Preheat oven to 350 degrees F. Spray 9×9-inch baking dish with cooking spray.

  2. In large bowl, stir together oats, cinnamon, nutmeg, salt and baking powder.

  3. In separate bowl, whisk together almond milk, maple syrup, egg and vanilla extract.

  4. Pour wet mixture into dry ingredients and stir until combined.

  5. Stir in strawberries and blueberries. Reserve a few berries for topping.

  6. Pour mixture into baking dish. Top with remaining berries.

  7. Bake 40 minutes or until top is golden and oatmeal is set. Let rest 10 minutes before serving.

  8. In small microwave-safe dish, combine almond butter and coconut oil and heat 30 seconds. Stir to combine; Drizzle over oatmeal before serving.
