Ingredients
- Muffin Batter
- Add to a bowl:
- 1 3/4 cups AP flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1.2 cup granulated sugar
- 1/2 cup light brown sugar
- Whisk all the above ingredients and set aside
- In another bowl, add:
- 1/3 cup melted and cooled butter
- 2 eggs
- 2 teaspoons almond extract or vanilla
- 1/4 cup milk
- 1/2 cup sour cream or Greek yogurt (usually use yogurt)
- Whisk the wet ingredients and blend evenly.
- 1 1/2 cups of a combination of red raspberries and blueberries, or another choice you prefer
Instructions
- Preheat the oven to 425 degrees and oil-spray 10 muffin cups in your pan to prepare your pan, and set aside.
- Whisk the wet ingredients into the dry ingredients just until combined; do not overmix.
- Fold in the fruits and any mix-ins.
- Fill the prepared tin to the top of the line.
- You can add more fruit on top if you prefer.
- Sprinkle the top with sugar.
- Place the muffins in the 425-degree hot oven and set the timer for 5 minutes.
- At the 5-minute mark, lower the temperature to 350 degrees.
- The muffins take around 25 minutes; you can add a toothpick to the center to check if they are done. If it comes out clean, take them out or continue baking for 2 more minutes and check again.
- Cool for 5 minutes, then remove from the muffin tin and cool on a wire rack.
