Ingredients

  • 1/4 cup olive oil
  • 1/2 cup unsweetened applesauce
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 cup whole wheat flour
  • 1/3 cup almond flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • 1/4 tsp. allspice
  • 1 Honeycrisp apple

Instructions

  • Preheat oven to 350 degrees F.
  • In large bowl, combine olive oil, applesauce, eggs and vanilla. Mix until well combined.
  • Next, stir in flours, baking soda, salt and remaining spices.
  • Grate apple into batter and stir well.
  • Prepare bundt pan with cooking spray and pour in cake batter.
  • Bake for 25 minutes or until center of cake is cooked through.
  • Once cooled, remove from bundt pan and serve.
