How to Make African Chicken Marinade

Making this easy marinade couldn’t be simpler! Add the garlic cloves, smoked paprika, fresh lemon juice, extra virgin olive oil, salt, black pepper, and fresh thyme to a food processor. Blend for about 2 minutes until smooth and combined – that’s it for the marinade ingredients!

Pour the marinade over your chicken breasts or whole chicken in a large mixing bowl, zip-top bag, or casserole dish, making sure to coat all sides of the chicken. Cover and refrigerate for at least an hour (the longer it marinates, the more flavor it soaks up).

When you’re ready to cook, you can grill, oven roast, or pan sear the chicken – all three methods take this marinade to the next level. Just be sure to cook until the chicken reaches an internal temperature of 165ºF. Garnish with fresh parsley or green onions.

This chicken marinade recipe was gone in a flash the last time I made it. My family cleaned their plates and asked when I was making it again! It’s the kind of chicken recipe that disappears fast, so you might want to double the batch. 

Prevent your screen from going dark

  • Add the garlic, smoked paprika, lemon juice, olive oil, thyme, salt, and black pepper to the bowl of a food processor. Process for 2 minutes until smooth.

  • Place the chicken in a large zip-top bag or shallow baking dish. Pour the marinade over the chicken, turning to coat evenly.

  • Cover and refrigerate for at least 1 hour or up to 24 hours.

  • Remove the chicken from the marinade and discard the used marinade.

  • Cook the chicken on the grill, in a 375ºF oven, or in a skillet over medium heat until it reaches an internal temperature of 165ºF.
