As summer begins to give way to fall, I find myself craving salads that are a little more substantial while still taking advantage of the beautiful produce available at the market. This Roasted Beet & Fresh Fig Salad is a perfect example, combining earthy roasted beets with sweet, ripe figs, peppery arugula, crunchy walnuts, and creamy Gorgonzola cheese.
Beets and figs may seem like an unusual pairing, but they work beautifully together. Roasting the beets intensifies their natural sweetness, while fresh figs add a delicate, jammy flavor that makes this salad feel particularly special. Thinly slivered red onion provides just enough sharpness to balance all that sweetness, and lightly toasted walnuts add both flavor and a welcome bit of crunch.
I like to serve everything over a generous bed of peppery arugula, which has enough personality to stand up to the other ingredients. Crumbled Gorgonzola adds a creamy, salty bite that contrasts wonderfully with both the beets and figs. If you find Gorgonzola a little too strong, you could substitute a milder blue cheese or even creamy goat cheese, although I particularly enjoy the combination of Gorgonzola and figs.
To bring everything together, I use a simple Maple Dijon Mustard Vinaigrette. The maple syrup echoes the natural sweetness of the roasted beets and figs, while Dijon mustard and vinegar give the dressing enough tang to keep the salad balanced rather than overly sweet.
You can roast the beets a day or two ahead and refrigerate them until needed, which makes assembling this salad very easy. For the best flavor and texture, allow refrigerated beets to come closer to room temperature before serving, and add the figs, walnuts, cheese, and vinaigrette just before bringing the salad to the table.
This colorful salad makes a lovely starter for a fall dinner, but it is substantial enough for a light lunch as well. I especially enjoy serving it alongside roasted or grilled poultry or pork, and its beautiful combination of ruby beets, fresh figs, greens, and creamy cheese makes it impressive enough for entertaining.

- 3 Medium Beets, Roasted Until Tender, Peeled & Chopped Into Bite Sized Pieces
- 8 Figs, Stemmed & Sliced
- 1/2 Red Onion, Finely Sliced
- 1/2 Cup Lightly Toasted Walnuts
- 6-7 Cups Freshly Washed & Dried Baby Arugula
- 1/2 Cup Gorgonzola Cheese Crumbles
- 1/3 Cup Olive Oil
- 1 Tablespoon Dijon Mustard
- 2 Tablespoons Apple Cider Vinegar
- 2 Teaspoons Pure Maple Syrup
- Salt & Pepper To Taste
Instructions
- In a large bowl, carefully mix together the beets, figs, and onion.
- In a small bowl, whisk together the dressing ingredients until blended.
- Pour half the dressing over the beet mixture and gently toss.
- Arrange the arugula on a large platter,
- Spoon the beet and fig mixture on top, then sprinkle with the chopped walnuts.
- Drizzle the rest of the dressing over te salad, then top with the Gorgonzola cheese crumbles.
