Whenever we visit soul food restaurants, smothered chicken is usually on the menu. And that makes me happy. Besides, there’s no limit to what you can smother. You can even smother mushrooms with gravy if you’re vegetarian.
However, there’s something about wings, no matter how they’re prepared, that is super comforting. Maybe it’s because you can eat them with your fingers without anyone looking at you funny.

Smothering food in a decadent gravy is common in Southern and Cajun cuisine. After pan-searing the chicken or other meat, using the drippings makes a no-waste gravy full of flavor. Plus, it’s a forgiving way to make any dinner better because a good gravy covers a multitude of sins.


How to Smother Chicken Wings

- Season chicken, make the flour coating, dredge the wings in the flour, and pan-sear them.

- When the wings are browned, remove them from the pan and sauté the onions for the gravy. Add the flour mixture and seasonings, stir well, and then add the liquids.

Store floured wings in a single layer on a baking tray in the fridge for a day or two. Then cook as planned.
Refrigerate leftovers in an airtight container for up to three days, or freeze them in a freezer-safe container for 2-3 months. Thaw overnight in the fridge before reheating on the stove on low heat or in the oven. Add a tablespoon or two of chicken stock if the gravy gets too thick.
