Cooking salmon with a sticky glaze is always a good idea. Salmon is meaty enough to stand up to sweet, aromatic flavors and the end result will always be totally delicious.
Ingredients
- 4 – Salmon fillets around 2 pounds
- 3/4Â cup apricot-pineapple preserves
- 3 tablespoons water
- 2 tablespoon fresh orange zest
- 2 tablespoon rice wine vinegar or you can use orange juice
- 2 tablespoons soy sauce
- 1 teaspoon minced garlic or granulated garlic powder
- pinch of red pepper flakes
- salt and pepper to taste
- pinch of ground ginger and cinnamon is optional
Instructions
- Combine all the glaze ingredients and bring to a simmer in a small saucepan.Â
- Allow cooking for a few minutes until the glaze has thickened and coats the back of a spoon easily.Â
- Adjust seasoning (add more soy or orange juice if necessary) and allow to cool slightly.Â
- Line a baking tray with foil and grease with a little oil/cooking spray.Â
- Place the salmon fillets on the tray, skin-side down.Â
- Pour over the glaze and place in the oven.
- Bake for 10 to 15 minutes ( depending on the thickness of the salmon), spooning the glaze over the salmon every 2-3 minutes, or until the salmon is glossy and sticky.Â
- Remove from the oven and allow to rest for a few minutes before serving with sides of your choice.
