Triple Berry Brown Betty | What’s Cookin’ Italian Style Cuisine

Must Try

There is something wonderfully nostalgic about a Brown Betty. It is simple, rustic, comforting, and the kind of dessert that makes your kitchen smell like something special is baking.

This Triple Berry Brown Betty takes that old-fashioned favorite and fills it with three juicy berries—blueberries, blackberries, and raspberries—then layers them with buttery, sweetened breadcrumbs that turn golden and delicious in the oven.

Every spoonful has a little bit of everything: tender fruit, sweet berry juices, buttery crumbs, and just enough cinnamon to make it taste warm and cozy. It is the perfect dessert when you want something homemade without the fuss of making a pie crust.

What I especially love about a Brown Betty is how easy it is to change.

You can use fresh berries when they are in season or reach into the freezer for a quick dessert any time of year.

Serve it warm with a scoop of vanilla ice cream and let it melt into all those delicious berry juices. It is an old-fashioned dessert that still feels right at home on today’s table.

Tips for Making the Best Triple Berry Brown Betty

  1. Use soft breadcrumbs. For the best texture, make fresh breadcrumbs from soft white bread, brioche, challah, or French bread. Very dry packaged breadcrumbs won’t give you the same tender, buttery topping.
  2. Don’t overmix the berries. Gently toss the fruit with the sugar and other ingredients so the berries don’t break apart before baking.Frozen berries work beautifully. There is no need to thaw them first. Add them directly to the filling, although you may need a few extra minutes of baking time.
  3. Let it rest. Give the Brown Betty about 10–15 minutes after baking. This allows the hot berry juices to settle and thicken slightly.
  4. Watch the topping. If the breadcrumbs begin browning too quickly before the fruit is bubbling, loosely cover the dish with foil for the remainder of the baking time.
  5. Add a little citrus. Lemon zest or a splash of fresh lemon juice brightens the berries and keeps the dessert from tasting overly sweet.
  6. Don’t skip the butter. The melted butter is what helps turn those humble breadcrumbs into a rich, golden topping.

A Little History about Brown Betty

Brown Betty is one of America’s classic old-fashioned baked fruit desserts. Unlike a cobbler, which traditionally has a biscuit or cake-like topping, and a crisp, which generally features oats in its crumb topping, a Brown Betty is known for its layers of fruit and sweetened breadcrumbs.

That simple topping is part of what makes this dessert so special.

It transforms everyday ingredients into something warm, buttery, and comforting—proof that you don’t need a complicated recipe to make an unforgettable dessert.

There is something wonderfully nostalgic about a Brown Betty. It is simple, rustic, comforting, and the kind of dessert you will love.

Ingredients

  • Berry Filling:
  • 2 cups fresh or frozen blueberries
  • 2 cups fresh or frozen blackberries
  • 2 cups fresh or frozen raspberries
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Brown Betty Topping:
  • 3 cups soft fresh breadcrumbs, preferably made from white or brioche bread
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350 degrees. Lightly butter a 9-inch square baking dish.
  2. Combine the blueberries, blackberries, and raspberries with the sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt in a large bowl, then set aside for 5 minutes.
  3. In a clean bowl, combine the breadcrumbs, sugar, melted butter, vanilla, cinnamon, and salt. Stir until the crumbs are evenly coated and buttery.
  4. Spread half of the berry mixture into the prepared baking dish. Sprinkle half of the breadcrumb mixture evenly over the berries.
  5. Add the rest of the berries, followed by the remaining breadcrumb mixture. Gently spread the crumbs over the top, covering most of the fruit.
  6. Bake for 35 to 40 minutes, or until the berries are bubbling around the edges and the breadcrumb topping is golden brown.
  7. Let this sit before serving: Let the Brown Betty cool for 10–15 minutes so the berry juices can thicken slightly.
  8. Serve warm with vanilla ice cream, whipped cream, or a drizzle of sweet cream.
