Made some birria tacos for my Korean parents. Birria tacos are my favorite food by far and it was time for me to make a homemade version for mom and dad. I made classic ones with just onions and cilantros toppings as well as ones with oaxaca cheese and some birria tostadas. I forgot to buy cojita cheese for tostadas which was a bummer but they all turned out delicious.
Roasting everything on charcoal made it so much more delicious than restaurant versions.
