Optional salt – For flavor depth, I like to add a pinch of salt. This is entirely your choice.

How to make healthy chocolate mousse
- Start by peeling your apples and chopping them into even, medium size cubes. Discard the skins, seeds, and cores.
- Place chopped fruit in a small saucepan, along with about a fourth cup of water. Cover and bring the pot to a boil over medium heat.
- Once boiling, reduce heat to low and continue to steam until soft and tender, about twenty minutes.
- Fully drain off all the water and set the apples aside.
- Finely chop the chocolate bars. Carefully melt in the microwave or in a double boiler on the stove top until smooth.
- Blend the apples, optional pinch of salt, and melted chocolate sauce in a blender or food processor, or with an immersion blender in a large bowl. The mixture will seem thick and chunky at first, so continue to blend until completely smooth.
- Pour into individual serving cups or fancy glasses. Garnish with fresh berries, mint leaves, whipped cream, or shaved chocolate.
- Cover leftovers and store in the refrigerator for up to five days. For optimal texture, freezing this dessert is not recommended.

Tips for the best healthy chocolate mousse
- Use good quality chocolate bars to achieve a fluffy dessert. Do not try to substitute chocolate chips or candy melts, because they contain added stabilizers and other ingredients that may yield a grainy or gritty texture.
- Stay away from Red Delicious apples (too mushy) or Granny Smith apples (too tart).
- Be sure to fully drain off all the water after boiling the fruit. This step prevents the chocolate from seizing.
