Ingredients

  • 1 Tbsp. olive oil
  • 1 small onion chopped
  • 1 clove garlic pressed
  • 1-1/2 cups rice rinsed in fine mesh strainer
  • 1-1/2 cups chicken broth or vegetable broth
  • 1 cup coconut milk
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 tsp. dried thyme
  • 1 can (15 oz.) kidney beans drained and rinsed
  • Lime wedges

Instructions

  • Heat medium sauté pan (that has a tight-fitting lid) over medium heat. Sauté onion in olive oil 7 minutes.
  • Add pressed garlic and stir in rice.
  • Add chicken broth, coconut milk, salt, pepper and thyme. Bring to boil then cover and simmer 20 minutes. Once rice is cooked, add beans, stir, cover and cook 5 more minutes.
