Whole Wheat Pizza Dough

If you love homemade pizza but want a more wholesome option, this whole wheat pizza crust is the perfect solution.

Ingredients

  • 6 1/2 cups sifted Whole Wheat Flour, extra flour for your hands
  • 3 cups lukewarm water should feel warm to your wrist, 109 degrees
  • 1 1/2 tablespoons granulated fast-acting yeast (2 packets)
  • 1 1/2 tablespoons regular salt, kosher or sea salt
  • 1 tablespoon sugar

Instructions

  1. There are two methods: one using an industrial mixer and the other by hand.
  2. If made by hand, add everything to a large 5-quart bowl with a lid, just mix till everything is evenly combined. For a mixer, blend everything evenly on medium speedfor around 3 to 4 minutes.
  3. Add yeast, salt, and sugar to the water the slowly blend in the flour evenly.
  4. The dough will be pretty stiff when using whole wheat, but that’s normal.
  5. Allow to rise.
  6. Cover with a lid or plastic wrap and add a lid ( it’s ok if not airtight).
  7. Allow the mixture to rise at room temperature until it begins to collapse (or at least flattens on top), about two hours.
  8. When it’s risen, shape it into whatever you prefer (pizza, bread, rolls)
  9. Let the dough rise for around half an hour before baking.
  10. Bake in a hot preheated oven at 430 degrees until browned.
  11. Cool at least 5 minutes before eating the bread on a wire rack.
  12. For pizza, bake until browned and crisp edges at the same oven temperature. Use your favorite sauce and cheese.
  13. I refrigerate the unused dough, and it will keep for up to a week in the refrigerator.
  14. Take out as needed until it rises for at least 40 minutes and bake.
