Whole wheat fruit cake is a healthier choice compared to the cake using all purpose flour. You can easily swap cake flour with wheat flour for most of the baking recipes like cake, cupcake, cookies and biscuits. The texture may slightly vary, but the flavour and taste remain the same.
Since the year is coming to an end, many of us are already in the festive mood, thinking about baking something special for Christmas and New year. While traditional Christmas plum cake is the classic choice, I thought of switching to a healthier option by making whole wheat flour cake.
This wheat fruit cake is light, soft and full of juicy fruits. It is an eggless cake, so curd is used to make it fluffy and moist. The warm flavours of cinnamon and ginger powder give the cake that classic holiday aroma. And the generous amount of dry fruits, nuts and colorful tutti frutti make every bite delightful and crunchy. You can even add chocolate chips, orange zest or extra nuts if you like.

Ingredients
Whole wheat flour / Atta : Wheat flour is a healthier alternative to the regular cake flour. You can also try this recipe with all purpose flour or a mix of both wheat and maida.
Baking soda : Baking soda acts as the leavening agent used for baking.
Water : Water added to adjust the consistency of the batter and also used for soaking the dry fruits.
Curd : As it is an eggless cake, curd is the main ingredient that acts as a natural leavening agent and egg replacer. It keeps the cake soft and moist.
Oil : Use any neutral oil like canola oil, sunflower oil, vegetable oil or even butter can be substituted.
Jaggery / Brown sugar : Jaggery or brown sugar gives a rich, deeper color and flavour than the regular white sugar.
Spices : Cinnamon powder and ginger powder are added to give the warm spice aroma.
Dry fruits and nuts : Add a handful of chopped nuts, raisins and tutti frutti for soaking.

Expert Tips
- Since this is a non-alcoholic version, boil the dry fruits and nuts in water for a minute Or soak them in orange juice for more flavour.
- Curd should be at room temperature before adding it to the batter.
- Toss the soaked dry fruits and nuts in a tablespoon of flour. So that it prevents them from sinking to the bottom of the cake.
- Grate and add the orange zest into the batter. This adds a beautiful aroma that pairs well with fruit cake.
Storage & Serving
Once the baking is done, let the cake cool completely. Store the cake in an airtight container and it stays good at room temperature for a week. Wrap the cake using cling film and refrigerate for a month. Warm them using a microwave before serving. Serve a warm slice of wheat fruit cake with dusting powdered sugar on top or pair it with a scoop of ice cream.

Q. Can I replace jaggery with granulated sugar ?
Yes, you can use regular granulated white sugar or palm jaggery. The cake color may slightly differ if using white sugar and adjust the sugar quantity accordingly.
Q. Can I bake this without an oven ?
Absolutely ! You can use a pressure cooker or a heavy bottomed pan to bake this cake. Place a stand inside and preheat for 10 minutes. Then place your cake pan and bake on low heat for 40 minutes. Insert a toothpick to check if it’s done.
Q. Can I soak the fruits in juice instead of water ?
Yes, you can soak the dry fruits and nuts in orange juice, apple juice or berry juice for about an hour. This adds more flavour, moist and sweetness to the cake.

Step by Step Pictures
1) Take raisins and dried fruits in a bowl. Add water or orange juice. You can use wine as well. Boil this mixture for 4 to 5 minutes. I placed this in microwave and cooked for 2 to 3 minutes. Remove and allow this to cool.

2)Now lets make the batter. Take plain yogurt (curd) in a bowl.

3)Add in oil, brown sugar. Instead of oil you can use melted butter.

4)Mix the wet ingredients really well. Add in the cooled dry fruits mixture and mix well.

5)Add in wheat flour. Instead of wheat flour, you can use plain flour too.

6)Add in baking soda, cinnamon and ginger powder. Mix using a spatula.

7)Once the batter is combined. Spoon this into a parchment lined loaf pan. Place this into the oven and bake.

8)Bake till done

9)Un mould. Slice and serve.

Ingredients
Dry Ingredients
- 1 cup Whole Wheat Flour 120 grams
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Ginger
- ½ teaspoon Baking Soda
Wet Ingredients
- ⅓ cup Curd (Plain Yogurt) 80 ml
- ¼ cup Oil or Melted Butter 60 ml
- ½ cup Brown Sugar 100 grams
Dried Fruits
- 3 tablespoon Tutti fruity (candied mixed fruits)
- ½ cup Seedless Black Raisins
- ½ cup Mixed Nuts chopped finely
- ¼ cup Water or Orange Juice (Wine) 60 ml
Instructions

Preheat oven to 180 degree C. Line a loaf pan with parchment paper and set aside.

Take dried fruits in a microwave safe bowl, add water or orange juice and boil for 2 mins in a microwave. Set aside to cool.

Take yogurt, oil, brown sugar in a bowl and mix well. Add in nuts and boiled raisin mix and mix well. Add in wheat flour, spice powders, baking soda and gently fold to combine.

Spoon it into a parchment lined baking pan and bake for 30 to 40 minutes. Insert a toothpick to check whether the cake is baked or not.

Remove it from oven and allow it to cool completely. de-mould. Slice and serve.
