Ingredients
- 1-1/4 lbs. boneless, skinless chicken thighs
- 1 Tbsp. olive oil
- 13.8 oz. chopped tomato
- 15 oz. white beans
- 1 tsp. pink salt
- 1/4 tsp. black pepper
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/4 tsp. oregano
- 1 cup coconut milk or coconut cream
Optional toppings
- Tortilla chips
- Shredded cheese
- Sliced jalapeño
- Red onion
Instructions

In soup pot, sauté chicken in olive oil 10 minutes until almost fully cooked.

Add tomatoes, beans and spices. Bring to boil, cover and simmer 15 minutes.

Remove chicken from chili, shred or chop, then add back to chili.

Pour in coconut milk. Simmer additional 10 minutes.
