Ingredients

  • 1-1/4 lbs. boneless, skinless chicken thighs
  • 1 Tbsp. olive oil
  • 13.8 oz. chopped tomato
  • 15 oz. white beans
  • 1 tsp. pink salt
  • 1/4 tsp. black pepper
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1/4 tsp. oregano
  • 1 cup coconut milk or coconut cream

Optional toppings

  • Tortilla chips
  • Shredded cheese
  • Sliced jalapeño
  • Red onion

Instructions

  • In soup pot, sauté chicken in olive oil 10 minutes until almost fully cooked.
  • Add tomatoes, beans and spices. Bring to boil, cover and simmer 15 minutes.
  • Remove chicken from chili, shred or chop, then add back to chili.
  • Pour in coconut milk. Simmer additional 10 minutes.
  • Serve as is or with toppings of choice.
