Ingredients

  • 2 Tbsp. sun-dried tomato oil
  • 1/2 onion finely diced
  • 1 smoked sausage ring cut into 1/2-in. rounds
  • 3 cloves garlic minced
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 3 Tbsp. tomato paste
  • 3 Tbsp. sun-dried tomatoes sliced
  • 1-1/2 tsp. kosher salt more to taste
  • 8 oz. penne pasta
  • 6 cups low-sodium chicken broth
  • 1 cup half and half
  • 1 can 15 oz. can garbanzo beans, rinsed and drained
  • 2 cups baby spinach packed
  • 1 cup Parmesan cheese freshly grated (plus more for serving)
  • 1/4 cup fresh basil finely chopped (plus more for serving)

Instructions

  • Heat heavy-bottomed pot over medium heat. Add sun-dried tomato oil and diced onion; cook 2 minutes.
  • Add chopped sausage; cook 3 minutes.
  • Stir in garlic, oregano, garlic powder, tomato paste, sun-dried tomatoes and salt. Cook 2 minutes over low heat.
  • Add pasta and chicken broth; bring to boil. Reduce heat and simmer 13 minutes, or until pasta is tender.
  • Stir in half and half, garbanzo beans and spinach. Mix well and cook 2 more minutes.
  • Remove from heat, stir in Parmesan and basil.
  • Ladle into bowls, top with extra cheese and basil, enjoy!
