Ingredients
- 2 Tbsp. sun-dried tomato oil
- 1/2 onion finely diced
- 1 smoked sausage ring cut into 1/2-in. rounds
- 3 cloves garlic minced
- 1 tsp. oregano
- 1 tsp. garlic powder
- 3 Tbsp. tomato paste
- 3 Tbsp. sun-dried tomatoes sliced
- 1-1/2 tsp. kosher salt more to taste
- 8 oz. penne pasta
- 6 cups low-sodium chicken broth
- 1 cup half and half
- 1 can 15 oz. can garbanzo beans, rinsed and drained
- 2 cups baby spinach packed
- 1 cup Parmesan cheese freshly grated (plus more for serving)
- 1/4 cup fresh basil finely chopped (plus more for serving)
Instructions

Heat heavy-bottomed pot over medium heat. Add sun-dried tomato oil and diced onion; cook 2 minutes.

Add chopped sausage; cook 3 minutes.

Stir in garlic, oregano, garlic powder, tomato paste, sun-dried tomatoes and salt. Cook 2 minutes over low heat.

Add pasta and chicken broth; bring to boil. Reduce heat and simmer 13 minutes, or until pasta is tender.

Stir in half and half, garbanzo beans and spinach. Mix well and cook 2 more minutes.

Remove from heat, stir in Parmesan and basil.

Ladle into bowls, top with extra cheese and basil, enjoy!
