Ingredients
- 1-1/2 lb. leftover turkey cooked and chopped
- 2 carrots chopped
- 2 stalks celery chopped
- 1 yellow onion chopped
- 2 Tbsp. olive oil
- 12 oz. egg noodles
- 4 cups vegetable broth
- 1/2 cup half & half
- 1 cup water
- 2 tsp. thyme
- 1 tsp. dried oregano
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 2 bay leaves
Instructions

Add olive oil to large pot on medium-high heat.

Mix in carrots, celery and onion. Cook until veggies are softened, about 5 minutes.

Meanwhile, add noodles to a pot of boiling water and cook as directed.

Pour broth, half & half and water into pot along with thyme, oregano, salt, pepper, garlic powder and bay leaves. Bring to a boil, stirring well.

Next, stir in cooked turkey and cooked noodles. Bring back to a boil then reduce to a simmer. Serve warm.
