Ingredients

  • 1-1/2 lb. leftover turkey cooked and chopped
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 1 yellow onion chopped
  • 2 Tbsp. olive oil
  • 12 oz. egg noodles
  • 4 cups vegetable broth
  • 1/2 cup half & half
  • 1 cup water
  • 2 tsp. thyme
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 2 bay leaves

Instructions

  • Add olive oil to large pot on medium-high heat.
  • Mix in carrots, celery and onion. Cook until veggies are softened, about 5 minutes.
  • Meanwhile, add noodles to a pot of boiling water and cook as directed.
  • Pour broth, half & half and water into pot along with thyme, oregano, salt, pepper, garlic powder and bay leaves. Bring to a boil, stirring well.
  • Next, stir in cooked turkey and cooked noodles. Bring back to a boil then reduce to a simmer. Serve warm.
