Kosha is method slow cooking meat, usually mutton, on a very low heat for a long duration, to get a rich caramelised flavour in the gravy. This becomes a perfect partner to pulao or Luchi especially on any occasion ❤️
Why no aloo? Aloo usually adds starch in the gravy which changes the texture and taste. Making the caramelised taste milder 🙃
