Ingredients
Pancakes
- 1-1/2 cups flour
- 2 Tbsp. coconut sugar
- 1 Tbsp. baking powder
- 1/2 tsp. sea salt
- 1-1/4 cup milk
- 2 large eggs beaten
- Dash of vanilla extract
Strawberry sauce
- 1 lb. fresh strawberries cut in half
- 1/4 cup sugar
- 1 orange juice
- Pinch of sea salt
Instructions

Heat medium pot over medium-high heat. Add strawberries, juice of 1 orange and splash of water. Cook down for 3-4 minutes until softened then add sugar and pinch of salt. Reduce heat to medium and cook for few minutes. When strawberries are soft, mash them with fork. Once sauce has thickened remove from heat.

Add sauce to sieve over bowl and press through with spatula so that only liquid runs through. Place bowl to side to cool.

To large bowl, add all pancake ingredients and mix well with whisk. Adjust thickness as desired.

Heat large pan to medium heat. Add cooking oil or butter then 1/2 cup of pancake batter. Cook for about 1 minute or until you see bubbles forming at top then flip and cook for another 30 seconds. Repeat process until they are all cooked.

Plate up your pancakes and add butter to each one and big dollop of strawberry sauce to top.
