Ingredients

  • 10 oz. frozen chopped spinach thawed
  • 1/3 cup non-fat Greek yogurt
  • 1/3 cup mozzarella cheese
  • 1/3 cup parmesan cheese
  • 8 oz. reduced-fat cream cheese
  • 1 Tbsp. Dijon mustard
  • 2 tsp. garlic minced
  • 24 wonton wrappers
  • Salt and pepper to taste
  • Handful of crushed red pepper flakes

Instructions

  • Preheat oven to 400 degrees F.
  • Add spinach to large bowl once thawed and excess water is removed.
  • To same bowl, add softened cream cheese, Dijon, parmesan, mozzarella, Greek yogurt, salt, pepper and minced garlic.
  • Mix until well combined
  • Spray muffin tin with cooking spray and lay wonton wrappers into each cup
  • Add two scoops of mixture to each wonton cup
  • Top with parmesan and crushed red pepper flakes
  • Bake for 8 minutes until edges are golden and crunchy.
