Spicy chicken skewers is one of the most popular recipes which is loved by all. It is made by skewering chicken and vegetables and cooking them. In the process the chicken becomes soft, and the vegetables become crunchy. It is an easy grab and go chicken dish.

I recently tried this and i was kind of addicted to it, because it turned out to be very delicious. It was spicy and juicy and smoky, everything you want a kebab to be.

About Chicken Skewers

Chicken skewers is made by marinating the chicken first in the spicy mix overnight so the flavors get inside. Then it is grilled along with vegetables like mushrooms, capsicum, and tomato. You can smell a smoky and yummy aroma when it is getting cooked. Since the chicken and veggies are alternatively stacked it looks so good. 

Chicken skewers marination makes the chicken soft and tasty. It gives a smoky flavor since the recipe is grilled, you don’t get from normal recipes. Adding honey makes it a little sweet, soy sauce makes it salty, and chilli makes it spicy. All these combine together and make it delicious. 

If you are using wooden skewers, put them in water for half an hour so they don’t get burnt in the oven.  To get a super soft and flavorful chicken marinate it overnight.  While grilling, brush a little oil or butter on top of the chicken so it stays shiny and does not dry. You can even use foil in the tray to make cleaning easy.

Expert tips 

  • Marinate for as many hours as possible, because that makes it really soft and juicy.
  • Don’t forget to turn the skewers while cooking, otherwise one side will burn. Y
  • ou can store leftover skewers in an airtight box in the fridge and heat them later in a pan or oven when needed.
  • For serving, this can be used as a main dish as well as side dish. This goes well with green chutney, naan, or even just plain rice. You can also have it with salad on the side to make it look healthy. 

FAQ 

Q: Can I use chicken leg instead of breast?

A: Yes, Just cut it into small bite pieces so it cooks well. I tried once with legs and it was very juicy. 

Q: I don’t have an oven. What shall I do? 

A: No problem. You can cook on a tawa or grill pan right on the stove. Just turn the skewers often so they don’t burn. 

Q: How to make it less spicy? 

A:You can put less chilli powder or even add a little curd in the marinate. That makes it tasty but not too spicy. 

Q: Can I add other vegetables? 

A: Yeah, you can! Sometimes I put zucchini or onion. Once I even tried pineapple and it gave a sweet taste with the spice. 

Ingredients

Chicken breast – 500 grams cut into chunks. Chunk pieces cook fast and become soft when marinated overnight 

Mushrooms – 200 grams with stalks removed. They mix with all the spicy masala and taste juicy. 

Capsicum or bell pepper – 1 big, chopped into square pieces. It gives a crunch and bright color. Tomatoes – 2, deseeded and cut into pieces. They give a light sour taste. Shallots or onion – 5 small or 1 medium. They give a sweet flavor while eating.

Garlic – 4 to 5 cloves. Makes the spicy mix smell and taste strong. 

Ginger – 4 cm piece. Adds a warm spicy taste. 

Honey – 3 tablespoons. It gives a mild sweetness which balances the spicy level. Soy sauce – 2 tablespoons. Gives that traditional salty umami flavor. 

Vinegar or lemon juice – 3 tablespoons. It helps in making the chicken soft. Salt – as needed. To make everything balanced and tasty. 

Chilli powder – 2 to 3 tablespoons. Adjust according to your spice preference level.. 

Oil – 4 to 5 tablespoons. Helps mix the paste and keeps chicken moist. 

Step by Step Pictures

1)take all your ingredients.

2)Lets make marinate in a blender. Take shallots, ginger, garlic in a blender.

3)Add in honey.

4)Add in soy sauce.

5)Add in vinegar or lemon juice.

6)Season with salt.

7)Add in red chilli powder.

8)Add in oil.

9)Now all the ingredients is added into the blender.

10)Blend till smooth.

11)take chopped chicken in a bowl.

12)Pour the marinate over the chicken.

13)Mix well and leave to marinate overnight in fridge.

14)Next day, take the chicken out.

15)mix it with mushrooms, capsicum, and tomatoes.

16)mix well.

17)Take a skewer.

18)then put the chicken and vegetables on skewers one by one. 

19)I skewered capsicum, chicken and then mushrooms.

21)You can use onions, tomatoes as well.

22)grease a baking tray with oil.

23)Then place the skewers on a foil-lined tray and grill them in the oven. 

23)After 10 minutes flip them and grill again for 5 to 7 minutes. 

24)You can brush excess marination on top.

25)Cook until chicken is completely done.

Ingredients  

  • 2 large Boneless Chicken Breast cut into chunks
  • 200 grams Mushrooms stalks removed
  • 1 large Bell Peppers chopped into chunks
  • 2 medium Tomatoes deseeded, chopped into chunks

For Marination

  • 5 no Shallots peeled
  • 5 cloves Garlic peeled
  • 2 cm Ginger peeled and chopped
  • 3 tablespoon Honey
  • 1 tablespoon Soy Sauce
  • 2 tablespoon Vinegar or Lemon Juice
  • 2 tablespoon Red Chilli Powder
  • 4 tablespoon Oil
  • Salt to taste

Instructions 

  • Take all marination ingredients in a blender and make it into a smooth puree.

  • Take cubed chicken in a bowl, pour marination over and mix well. Cover and let it marinate overnight.

  • Next day take the chicken out of fridge before 30 mins.

  • Add in the mushrooms, tomatoes, capsicum and toss well. Let it sit for 30 mins.

  • Preheat oven to 220 degree C for 10 mins.

  • Now skewer the chicken and veggies.

  • Place it in the oiled foil lined baking tray. Pop it into the oven and grill for 10 mins. Remove it and flip the skewers. Grill again for 5 to 7 mins.

  • Remove the tray and serve hot.
