Ingredients
Soft pretzel bites
- 1 cup warm water
- 1 tsp. organic cane sugar
- 2 tsp. active dry yeast
- 2-1/2 cups all-purpose flour
- 1 tsp. Himalayan fine pink salt
- 1/4 cup baking soda
- 4 cups water
- Coarse sea salt
Cheese dip
- 1 cup raw cashews soaked in hot water for at least 30 minutes, then drained
- 1/2 cup unsweetened plant-based milk
- 1/4 cup nutritional yeast
- 2 Tbsp. lemon juice
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. smoked paprika
- 1/8 tsp. Himalayan fine pink salt
Instructions
Soft pretzel bites

Mix warm water, sugar and yeast. Let sit 5 minutes.

Add flour and salt, then knead until smooth. Rest dough 10 minutes.

Cut dough into small pieces, roll into ropes and cut ropes into bite-sized pieces.

Preheat oven to 450 degrees F. Set out a baking sheet.

In pot on stove, boil water with baking soda. Drop bite-sized pieces into water for 30 seconds. Remove with strainer and place on baking sheet. Sprinkle with salt and bake 12-15 minutes.
Cheese dip

In high-speed blender, combine all dip ingredients and blend until completely smooth and creamy, scraping down sides as needed.

Transfer dip to a saucepan and heat over medium heat, stirring constantly, until thickened to your desired consistency, about 5-10 minutes, tasting and adjusting seasonings as needed.

Serve dip warm with soft pretzel bites.
