Sio Pasta is opening at Raffles City with fresh pasta
With the opening of the omakase restaurant Sushidan late last year, Raffles City diners were treated to great Japanese cuisine at affordable prices. Now, the mall is set to welcome another Japan-linked concept—this time with an Italian twist. Enter Sio Pasta, a pasta bar by renowned Japanese chef Shusaku Toba, best known for his work at the Michelin-approved Italian restaurant Sio Aoyama in Tokyo.

Sio Pasta officially opens on 26 March 2026, and will serve fresh, handmade pasta at affordable prices—which is a pleasant surprise, considering the pedigree of its chef-owner. The menu will feature over 10 pasta dishes, with most items showcasing Chef Toba’s Japanese influences.

We dropped by ahead of their official launch for a first look at the menu. Here’s our honest take on their offerings!
Food at Sio Pasta

We started off our meal with their Baguette and Fig Butter ($4.80++), featuring two crispy slices of freshly baked baguette, each generously topped with their house-churned fig butter.

The fig butter was smooth with a slight grit from the crushed fig seeds, a sign that real figs were used. It had a refreshing fruity sweetness that balanced the butter’s creamy saltiness, making it the perfect starter to whet our appetites.

Up next was the Japanese-style Fried Chicken, available in five unique flavours: Classic Teriyaki Sauce ($4.80++), Sweet Chilli Sauce ($4.80++), Sriracha Mayonnaise ($4.80++), Mentaiko Mayonnaise ($5.80++), and Yuzu Kosho Mayonnaise ($5.80++). As recommended by the staff, we went with the latter.
FYI, you can also choose to have your chicken served plain or with a sprinkle of Black Garlic Pepper at no additional cost, though we opted to skip the extra seasoning so we could better appreciate the flavours of the sauce.

Our plate came with four meaty chunks of fried chicken karaage. Each piece was fried to perfection, with a light, crispy batter on the outside and juicy, succulent meat on the inside. Even after sitting out for a while, the texture held up well, retaining its crunch.
The creamy Yuzu Kosho Mayonnaise paired well with the chicken, lending a delicious tangy heat from the yuzu kosho, AKA a Japanese paste made from yuzu peels and chilli peppers.

With the appetisers out of the way, it was time for the star of the show—the fresh pasta!

We first had the Fried Egg, Cheese, Salted Kelp Japanese-style Pasta ($13.80++), the most affordable pasta dish on the menu. True to its name, the dish features spaghetti cooked in a house-made sauce with cheese and salted kelp, topped with a fried egg.

Despite its simplicity, the pasta impressed us. The egg was cooked masterfully, with fluffy, cloud-like whites and a delicate, runny yolk. Flavour-wise, we loved the combination of cheese and egg yolk, which reminded us of a light and creamy salted egg sauce, zhnged up by a savoury umami from the bits of salted kelp.

That said, the noodles were a tad too soft for our liking, and they lacked that firmer, more al dente bite we were looking for.

We also had The Best Mentaiko Pasta ($16.80), starring fresh pasta tossed in a creamy mentaiko sauce, garnished with green onions, shredded nori, and a dollop of mentaiko.
Do note that this dish isn’t a permanent menu item and will only be available till the end of April 2026 as part of their Monthly Best Pasta showcase.

Fans of mentaiko will surely love this pasta. It was rich and creamy with a hint of spice, and despite being loaded with mentaiko, the dish didn’t become the least cloying. This was probably due to the generous scatter of chopped green onions, which added a nice touch of freshness to the heavier flavours.
On the downside, the noodles were softer than those in our first pasta, with some bites being a tad mushy.

For dessert, we had the Japanese-style Pudding with Fresh Cream ($3.80++), starring chilled Japanese pudding doused in a syrupy caramel sauce, finished with their house-made whipped cream.

Made with French egg yolks, the flan-like pudding was soft, smooth, and silky. It had a delicate eggy flavour that paired well with the bittersweet caramel sauce. The dollop of cream on top was a nice touch, mellowing down the sweetness of the sauce.

Sio Pasta – Eatbook review
Sio Pasta’s dishes definitely hit the mark in terms of flavour, and their unique fusion of Italian and Japanese cuisine certainly impressed us. There’s still room for improvement, but given their convenient location, wallet-friendly prices, and tasty food, we can see ourselves returning once they’ve had time to fine-tune things.
