Simple Gluten-Free Tomato Focaccia

  1. Preheat oven to 350 degrees F. Grease baking sheet with olive oil.

  2. In large mixing bowl, whisk together eggs, water and olive oil.

  3. Add baking mix and combine well.

  4. Stir in apple cider vinegar until well incorporated and let dough sit to thicken for 4 minutes.

  5. On work surface, using hands coated with olive oil, roll dough into one large ball. Using hands, flatten out on prepared baking sheet.

  6. Onto dough, arrange cherry tomatoes and onion slices and press slightly into dough. Season focaccia with oregano, salt, pepper and a drizzle of olive oil.

  7. Bake 18-20 minute, turning oven to broil for final minute.
