Ingredients

  • 1 cup warm water
  • 4 tsp. active dry yeast
  • 1/4 cup sugar
  • 3 cups gluten-free flour
  • 1 Tbsp. xanthan gum
  • 2 tsp. baking powder
  • 1-3/4 tsp. salt
  • 4 eggs
  • 1/4 cup olive oil

Topping

  • 1 cup sugar
  • 1 Tbsp. cinnamon
  • 1/2 cup butter melted

Instructions

  • Place 3/4 cup warm water, yeast and sugar in a small bowl; let sit for 5 minutes until bubbly. Prep dough ingredients.
  • Using stand mixer, combine flour, xanthan gum, baking powder and salt. Whisk together. Add yeast mixture, eggs and oil. Mix on medium speed with dough hook. Add 1/4 cup water, 1 tablespoon at a time, until dough is sticky but touchable. Knead in mixer for 5 minutes.
  • In medium bowl with lid, combine cinnamon and sugar. Scoop tablespoon-sized dough balls and drop into cinnamon sugar. Cover and shake to coat.
  • Place dough balls into greased 12-cup Bundt pan, evenly distributing. Pour remaining cinnamon sugar over top, cover and let rise in warm place until doubled, about 1 hour.
  • Preheat oven to 350 degrees F. Pour melted butter over risen dough, place pan on sheet pan to catch any drips and bake for 30-40 minutes until golden brown and set. Let cool for 3 minutes before turning out onto platter.
