In less than 45 minutes, dinner’s bubbling away, ready to get crowned with a gooey sprinkle of mozzarella. It’s everyone’s favorite comfort food served with a ladle, and nobody’s complaining.

Ingredients
- 1 lb. lean ground turkey
- 1-1/2 Tbsp. olive oil divided
- 1-1/2 tsp. fennel seeds
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- 2-1/2 tsp. Italian seasoning divided
- 1/2 tsp. crushed red pepper flakes optional
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 medium onion diced
- 1 green bell pepper diced
- 8 oz. mushrooms sliced
- 3 cloves garlic minced
- 28 oz. crushed tomatoes
- 15 oz. fire-roasted diced tomatoes
- 4 cups chicken broth
- 1/2 tsp. dried oregano
Optional toppings
- Shredded part-skim mozzarella
- Fresh basil leaves
- Black olives
- Turkey pepperoni slices
Instructions

In large pot or Dutch oven, heat 1/2 Tbsp. olive oil over medium heat.

Add ground turkey or chosen meat along with fennel seeds, garlic powder, onion powder, smoked paprika, 1 tsp. Italian seasoning, crushed red pepper flakes, salt and black pepper. Cook 6-8 minutes, breaking apart with spatula, until browned and cooked through. Transfer to a plate and set aside.

In same pot, heat 1 Tbsp. olive oil over medium heat. Add onion, green bell pepper and mushrooms. Sauté 5-6 minutes until softened and mushrooms release their moisture. Add garlic and cook 30 seconds until fragrant.

Return cooked turkey sausage to pot. Add crushed tomatoes, diced fire-roasted tomatoes, chicken broth, 1-½ tsp. Italian seasoning and oregano. Stir well. Bring to a gentle boil, then reduce heat to low and simmer uncovered 20-25 minutes, stirring occasionally. Taste and adjust seasoning with additional salt and pepper if needed.

To serve, ladle soup into bowls and top with shredded mozzarella, if desired. Garnish with your favorite pizza toppings like fresh basil, black olives or turkey pepperoni slices for extra pizza flair. Serve hot.
