Orange Juice Glazed Candied Yams

Orange Juice Glazed Candied Yams

This recipe for candied yams uses Florida orange juice and brown sugar to create a sweet, zesty, and buttery glaze.

Ingredients

  • 3 pounds of yams, potatoes peeled and sliced into 1/2-inch thick rounds
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar, packed
  • 1/2 cup orange juice (pure, no pulp), preferably freshly squeezed orange juice
  • 1/4 cup granulated sugar (optional, for extra sweetness)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Zest from 1 orange

Instructions

  1. Preheat the oven to 400 degrees and grease a 9 x 13 baking casserole dish.
  2. Place the potatoes in the casserole dish and set aside.
  3. In a heavy-duty medium-sized saucepan, whisk together the orange juice, zest, vanilla, sugar, and spices until smooth.
  4. Bring this mixture to a boil, then lower the heat to a low simmer for around 5 minutes or until the sauce slightly thickens (sometimes it takes a few more minutes.
  5. Pour the sauce over the potatoes and stir to coat them evenly.
  6. Cover tightly with foil.
  7. Bake in a preheated oven for around 30 minutes. Then stir again.
  8. Continue baking for around 40 more minutes, stirring every 20 minutes and until they become thickly glazed.
