Coat a cast-iron skillet with cooking spray oil, add the potatoes whole of cut in half(your choice) then season them with whatever you like.
Heat the pan on the grill to medium heat, add the potatoes and saute until crispy flipping a few times (these can also be done in the air fryer at 400 degrees for around 11 minutes).
Fresh herbs on top are terrific adding some chopped basil, rosemary and thyme, you can also add some red pepper flakes or chili powder on top.

New York Salt Potato Recipe
Salt potatoes are a summer’s barbecued staple in Central New York, they are not just boiled potatoes, they’re creamy and dipped in melted butter
Prep time: 10 MinCook time: 25 MinTotal time: 35 Min
Ingredients
- 2 quarts of water
- 1 – 1/4 cups kosher salt
- 4 pounds one-to-two bite-sized new white boiling potatoes, small new potatoes like Yukon gold
- 1 stick or more of unsalted butter melted for dipping after the potatoes are cooked
- Serving Suggestions Salt Potatoes:
- The original recipe serves the potatoes dipped in melted butter.
- Optional:
- Add herbs and spices for herb-flavored potatoes
- Add Cajun seasoning for spicy potatoes
- Add Taco seasoning
- Toss in hot sauce with butter for buffalo-style potatoes
- Optional for leftovers:
- Broil them for crispy skins and add dried oregano, parsley, and basil for an herb coating after boiling
Instructions
- Wash the baby potatoes and remove any dark spots.
- Using a 5-quart pan, add 2 quarts of water and bring to a boil.
- Add the salt and stir to evenly distribute.
- Place the potatoes in the boiling water with salt and set the timer for 23 minutes, or until a fork pierces them easily.
- Drain and let them sit for around 4 minutes until the salty crust forms.
- Serve immediately with melted unsalted butter.
