Ingredients

  • 1 medium onion chopped
  • 1 medium sweet potato cubed
  • 1 Tbsp. olive oil
  • 4 cups kale chopped
  • 32 oz. vegetable broth
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. thyme
  • 1 can 15 oz. chickpeas

Instructions

  • In medium soup pot, sauté onion and sweet potato for 10 minutes.
  • Add broth, kale and spices.
  • Simmer for 10 minutes
  • Stir in chickpeas. Simmer for an additional 10 minutes.
  • Serve warm.
