Eggnog is a special holiday drink which taste so creamy and delicious when served cold over some ice. You can add rum or brandy if you really want it. It has been on my bucket list for quite a long time. Finally made it yesterday and it was delicious. It was thick, creamy and luscious. Serve it chilled for best taste.

Q. Is it safe to drink ? 

Yes it is absolutely good and safe to drink. Because the base is cooked completely until the raw smell of egg leaves. And it is non-alcoholic too. 

Q. How long does it need to be chilled before serving ? 

Chilli at least 2 hours or longer so that flavours get infused and you’ll have a smooth drink. 

Q. Does the drink taste like egg ? 

No, it tastes so sweet and creamy. The egg flavour is beautifully balanced with cream, sugar, vanilla and warm spices. 

Q. My milk got curdled ? What goes wrong ? 

If you cook on high heat, the egg may start cooking fast and scramble. So, slowly heat the eggs along with milk in that way it prevents curdling and keeps the drink smooth. 

Q. How long can I store the eggnog in the refrigerator ?

Well, the eggnog can be stored in the refrigerator for 1 to 3 days.

Ingredients

Egg yolks – Egg yolks are the main ingredient in this recipe. This makes the eggnog rich, creamy and also thickens the drink.

Sugar – Sugar is added for the sweetness and balances the flavour of egg and spices. Add more according to your preference. 

Milk – Milk is the base for the eggnog. Use full fat milk for a rich and creamy drink. You can also substitute with almond milk, cashew milk or oat milk. 

Cream – Use full fat cream for a rich and smooth texture. 

Spices – I have used spices like nutmeg, cloves and cinnamon powder. These spices add a warm and spicy note to the drink. I have added whole cloves but you can also add grounded cloves. 

Vanilla essence – This extract enhances the overall flavour of the drink with a hint of sweet aroma. 

Optional – You can add rum, brandy if you’re serving for adults. 

Expert Tips

  • Use good quality fresh eggs for better flavour. 
  • When you add milk mixture to the egg yolks, pour very slowly while whisking constantly. This prevents the egg from curdling. 
  • The spices are so powerful, so don’t add too much. Otherwise the drink may turn bitter. 
  • Make sure to bring the cream mix to a warm temperature before adding to the eggs. 
  • Keep the heat low to medium and cook. 
  • After cooking, strain the drink through a strainer to remove spices or any lumps. 
  • If you’re serving for kids, add whipped cream or chocolate shavings on top. 

Storage & Serving

The eggnog should come to room temperature before storing in the refrigerator. Chill this for at least 4 hours or overnight for best flavour. Store them in an airtight jar or bottle. 

Serve this chilled eggnog in small dessert glasses with chocolate shavings, whipped cream or caramel syrup on top. 

Step by Step Pictures

1)Take egg yolks in a bowl. Add in sugar.

2)Whisk well until the egg yolk and sugar gets creamy and frothy.

3)Take cream and milk in a sauce pan.

4)Add some ground cinnamon

5)Add in nutmeg

6)Add some cloves

7)Mix this really well and place on heat. Now mix this well and heat. bring it to a simmer.

12)Now it has started to simmer. Dont boil it.

13)Pour the hot milk and cream mixture into the egg and sugar mixture and whisk well.

14)Now pour it back into the sauce pan

15)Cook on very low heat while keeping on mixing till it thickens

16)Keep cooking and stirring on very low heat.

17)This way the custard wont curdle.

Ingredients  

  • 2 large Egg Yolks
  • â…“ cup Granulated Sugar
  • 1¼ cup Whole Full Fat Milk
  • ¾ cup Heavy Cream
  • ¼ teaspoon Ground Nutmeg
  • 2 teaspoon Vanilla Extract
  • â…› teaspoon Ground Cloves
  • ½ teaspoon Ground Cinnamon

Instructions 

  • Take egg yolk in a bowl, add sugar and whisk till pale and frothy. Set aside.

  • Take milk, cream, nutmeg, cinnamon, cloves in a sauce pan and heat till it begins to simmer.

  • Now add the hot milk and cream to the egg yolk mixture and whisk well. Now pour it back into the sauce pan and cook on very low heat till it thickens.

  • Once it thickens, strain this using a fine mesh sieve. Add in some vanilla and mix well. Chill for 4 to 6 hours. Pour it into serving glass and enjoy.
