Ingredients
Protein cookie dough
- 1/2 cup cashew butter
- 1/3 cup coconut oil melted
- 1/2 tsp salt
- 1 cup almond flour
- 1 cup vanilla protein powder
- 1/2 cup dark chocolate chips
Chocolate ganache
- 6 oz. dark chocolate chips
- 3 Tbsp. boiling water
- Flaky sea salt
Instructions

Make cookie dough: Mix cashew butter, melted coconut oil and salt until smooth. Stir in almond flour, protein powder and chocolate chips until thick dough forms.

Press dough into parchment-lined loaf pan and smooth top.

Make ganache: Add hot water to chocolate and stir until smooth. If needed, gently heat in microwave or over double boiler until fully melted.

Pour ganache over cookie dough and smooth it out. Sprinkle with flaky sea salt.

Refrigerate for several hours, until fully set.

Once set, remove from fridge and let soften for 15 minutes then slice and serve.
