If you’re not a fan of eating the same thing every day here are some things I prep on a weekly basis to make workweek meals a breeze:

1. Ground meat a la Mexicana – I buy what’s on sale or use what’s in my freezer but go to’s are usually 93/7 ground beef or ground turkey.
2. Frijoles de la olla – while I cook, I have these
boiling in the background. Yes you can used canned beans but this is so much more affordable.
3. Salsa – this is great to top my food with since it’s low calorie and packs hidden vegetables
